Ingredients :
- Ginger – 250 gm
- Tamarind – 25 gm (A lemon Size)
- Chilly powder – 4 tsp
- Coriander powder – 6 tsp
- Jaggery – 25 gm
- Mustard – 1 tsp
- Curry leaves : 1 Sprig
- Salt : As required
- Fenugreek powder – 2 tsp
- Oil : As required
Preparation Method:
- Cut the cleaned ginger in round slices. Fry them in coconut oil.
- Crush the fried ginger.
- Squeeze the tamarind in water and and make a pulp.
- Heat the leftover oil in the pan. Splutter mustard seeds.
- Add the curry leaves and the coarsely ground ginger and saute.
- Add the chilly powder, coriander powder, turmeric powder, fenugreek powder and saute well.
- Add the tamarind extract, jaggery and salt.
- Let it boil till it becomes thick. Add the fried fenugreek powder & mix. Remove from fire.
- The kerala special ginger curry is ready.
