Mushroom Masala Thoran

Ingredients:

  • 10 cups of button mushrooms (cleaned and grated)
  • 2 medium onions, sliced lengthwise
  • 5 green chilies
  • A small piece of ginger
  • A stalk of curry leaves
  • ½ tsp fennel powder
  • ½ tsp garam masala
  • ½ tsp turmeric powder
  • 1 cup shredded coconut
  • 2 tsp oil
  • ¼ tsp mustard seeds
  • Salt to taste
  • Water as needed

Preparation Method:

  • Clean the mushrooms and grate them.
  • Slice the onions lengthwise
  • Finely chop the ginger.
  • Grind the coconut, turmeric powder, and green chilies into a smooth paste.
  • Heat oil in a deep pan. Add mustard seeds and let them splutter.
  • Add the sliced onions, chopped ginger, and curry leaves.
  • Sauté until the onions become soft.
  • Add fennel powder, garam masala, and salt. Mix well.
  • Add the grated mushrooms and stir-fry until they are half cooked and the water evaporates.
  • Mix in the coconut paste and cook for a few more minutes until the flavors meld together.
  • Remove from heat and serve.
