Egg Curry

  • Boiled egg : 6 Nos
  • Onion : 2 (thinly sliced)
  • Green chillies : 5 (vertically sliced)
  • Tomatoes : 1 (sliced)
  • Chilly powder : 1 tsp
  • Coriander powder : 2 tsp
  • Garam masala : 1/2 tsp
  • Turmeric Powder : 1/4 tsp
  • Garlic Paste : 1 tsp
  • Ginger Paste : 1 tsp
  • Coconut oil : 3 tsp
  • Curry leaves : 1 sprig
  • Mustard Seeds : 1/4 tsp
  • Water : as needed
  • Salt : as needed

Preparation Method:

  1. Boil the eggs with some salt, deshell and keep it aside.
  2. Heat oil in a pan, splutter mustard seeds, add sliced onion, curry leaves, garlic, ginger, green chillies and saute till onion become brownish.
  3. Add all spice powder (Turmeric, Chilly, Coriander, Garam masala ) and saute for a minute over low flame.
  4. Add tomato and cook till tomatoes become soft.
  5. Cut the de shelled egg vertically, Drop the eggs into the pan and mix it well with the mixture. Cover the lid for 5 minutes in a low flame.
  6. Add salt to taste, and allow it to boil.
  7. Remove from the fire and serve hot.
