Pineapple Curry

  • Pineapple – 1/2 (Cut into small pieces)
  • Green Chilli – 3 nos (Sliced length wise)
  • Ginger – 1 inch piece (Chopped) (Ginger paste – 1 tsp)
  • Grated Coconut – 1/2 cup
  • Dry Red Chillies – 2 nos
  • Curd – 3/4 cup
  • Coconut Oil – 1 tbsp
  • Mustard Seeds – 1 tsp
  • Shallot – 4 nos (Sliced)
  • Curry Leaves – 1 Sprig
  • Water – 3/4 cup
  • Salt – To Taste

Preparation Method:

  1. Peel off pineapple skin and cut it into small pieces (Use half if the pineapple is big)
  2. Grind the coconut into paste.
  3. Cook the pineapple along with green chilli, ginger, salt and water.
  4. When it is done add coconut paste, mix it well and wait till it boils.
  5. Remove from flame. Add curd and salt to taste and Mix it well.
  6. Heat coconut oil in apan, add mustard seeds. When it splutters add red chillies, shallot and curry leaves.
  7. Add this sauted mix to the cooked pineapple and mix it.
  8. Serve is as a side dish.
