Ingredients:
- Pineapple – 1/2 (Cut into small pieces)
- Green Chilli – 3 nos (Sliced length wise)
- Ginger – 1 inch piece (Chopped) (Ginger paste – 1 tsp)
- Grated Coconut – 1/2 cup
- Dry Red Chillies – 2 nos
- Curd – 3/4 cup
- Coconut Oil – 1 tbsp
- Mustard Seeds – 1 tsp
- Shallot – 4 nos (Sliced)
- Curry Leaves – 1 Sprig
- Water – 3/4 cup
- Salt – To Taste
Preparation Method:
- Peel off pineapple skin and cut it into small pieces (Use half if the pineapple is big)
- Grind the coconut into paste.
- Cook the pineapple along with green chilli, ginger, salt and water.
- When it is done add coconut paste, mix it well and wait till it boils.
- Remove from flame. Add curd and salt to taste and Mix it well.
- Heat coconut oil in apan, add mustard seeds. When it splutters add red chillies, shallot and curry leaves.
- Add this sauted mix to the cooked pineapple and mix it.
- Serve is as a side dish.
