Kaju Katli Recipe (Cashew Fudge)
INGREDIENTS :
Cashew nuts: 2 cups
Sugar: 1 cup or 200 grams sugar
Corn flour: 2 teaspoons
Ghee / Vegetable Spread: 2 teaspoons
Water: 1 cup
Edible Silver Foil/Leaf, baking paper (optional)
PREPARATION METHOD:
1). Grind all the cashew nuts together with corn flour to a fine powder.
2). Take a heavy bottomed pan (or kadai or a non-stick pan), and pour in the sugar and water. Mix them well and boil for about 10 minutes, until the sugar syrup thickens up to a two string consistency.
3). Add the cashew nuts and corn flour powder to it. Stir and keep on stirring on a low flame.
4). Continue stirring the mixture together till no lumps remain.
5). Add ghee (or Vegetable Spread) and cook for another 7 to 10 minutes, until the mixture contents thickens up and begins to leave the sides of the pan.
6). Once it reaches the dough like consistency, turn off the heat and spread it evenly in a tray keeping about 1/2 inch thickness. (You can also place it on a large butter paper, The cashew dough can also be rolled between two butter papers).
7). Once cooled, cut the Kaju Katli into desired shapes.
8). The delicious Kaju Katli (Burfi) is ready to be eaten, or it can be stored in an air tight container and refrigerated for future use.
(You can also optionally make a sandwich of two the Kaju Katli (Burfi) with crushed pistachios and serve)
